We need to talk about lasagne

24 April 2024

In today’s postbag John Walter responds to Miss Guest’s diary talking lasagne

A little friendly culinary advice for the wonderful Miss Guest Diary re 22/04 diary. You can't make a proper lasagne without the eggs as they are used for making the pasta sheets required. No doubt like myself you get them ready made, but more likely home made by our Guardian reading chums and foodies who have lived down south. Keep up the good work folks.

from John Walter

Letters Ed responds: Very true John. Perhaps Miss Guest is an artisanal pasta maker using an egg free recipe whereas I’m definitely whatever is available at the supermarket.
